
This simple, filling breakfast with wheatberries is one of our favorite ways to start the day. Drizzle with hot sauce or salsa, top with chopped herbs or even cook the wheatberries in broth for some extra flavor.
INSTRUCTIONS
In a small saucepan, bring the wheatberries and 3 cups water to a boil. Turn the heat down to a simmer and cook until the wheatberries are heated through, about 1 hour. Drain and portion out into two bowls.
Cook the eggs to your liking and put them over the wheatberries along with the sliced avocado. Season with salt and pepper and drizzle with hot sauce if desired.
