Roasted Spring Onion with Tarragon

This simple side dish is a great way to dip your toe in the tarragon water. We love the flavor of the tarragon combined with the melt-in-your-mouth spring onions.

INGREDIENTS

2 bunches spring onion

1 tablespoon olive oil

1 tablespoon tarragon, minced

salt and pepper to taste

 

INSTRUCTIONS

Preheat the oven to 350 degrees Fahrenheit. Clean the spring onion and slice the bottoms off. Trim the onions, leaving about 3 inches of the green part on the bulb. Place the spring onions in a baking pan.

Drizzle the onions with olive oil and use your hands to distribute the oil over the onions. Sprinkle the tarragon over the top, then season with salt and pepper. Bake for 30-35 minutes, shaking the pan halfway through, until the onions are soft and golden brown.
