Massaged Kale Salad
This massaged kale salad with a light dressing keeps well in the fridge and is perfect for a packed lunch. Massaging the kale makes for a crisp-yet-soft kale crunch.
Roughly chop the kale and add to a large bowl. Drizzle with half the lemon juice and a little bit of olive oil. Massage until the kale starts to soften and wilt, 2 to 3 minutes. Set aside while you make the dressing.
In a small bowl, whisk the remaining lemon juice with the honey and lots of freshly ground black pepper. Stream in the 1/4 cup of oil while whisking until a dressing forms and you like how it tastes. Pour the dressing over the kale. Add the apples and pumpkin seeds and season with salt to taste.
