
These melt-in-your-mouth leeks make a quick and easy side dish. They're the perfect accompaniment to pretty much any meal.
INSTRUCTIONS
Trim the dark green top and roots off the leek and compost. Cut the leeks in half lengthwise and rinse them thoroughly, keeping the leaves together.
In a heavy skillet, heat the olive oil over medium heat. Add the leeks cut-side down. Cook the leeks, stirring occasionally, about five minutes. Add the broth, cover and braise for 10 minutes or until very tender. Remove the lid and cook uncovered for five minutes to dissolve some of the liquid.
Sprinkle with salt, pepper and Parmesan.
Serve warm.
