
Cooking artichokes in the crockpot is our new favorite thing because it means we get to enjoy artichokes but don't have to wait the hour after work it takes to typically make them (they just cook while we're at work!). INSTRUCTIONS
To clean and prep the artichokes for the slow cooker, trim off the small tough leaves off the bottom of the artichoke. With scissors, cut off all of the spiny tops of each leaf. Open the artichoke as much as you can and scoop out the very center with a spoon. (If you don’t have time to scrape out the choke, then you can do it after they are cooked and before you serve them, it’s a little easier when the artichoke is soft). PS: Save all the cut leaves and scraps from the artichoke to make our homemade Vegetable Broth.
Put the artichokes stem-side down in the slow cooker and carefully pour in the water or broth. Sprinkle the artichokes with salt, pepper, fresh-squeezed lemon, lemon zest, fresh thyme, fresh rosemary and garlic. Put a little chunk of butter on the top of each artichoke.
Cook on low for 6 hours or until the leaves can be easily pulled away. (The final cooking time will depend on the actual heat of your slow cooker and the size of the artichokes)
Put each artichoke on a serving plate with a little ramekin of garlic butter, aioli or your favorite sauce.
