
Lemon bars are always a crowd pleaser and these updated ones with grapefruit are sure to be a big hit!
INSTRUCTIONS
Preheat the oven to 350 degrees F.
Prepare a 9 x 13 inch baking dish by spraying it with nonstick baking spray and covering the spray with a piece of parchment.
In a mixing bowl with the paddle attachment, whip the butter and powdered sugar until light and fluffy, about 5 minutes. Add in the flour and salt and mix until incorporated. Roll out the dough in between two pieces of plastic wrap and chill for 20 minutes, until it’s a bit firm and easier to handle. With a floured rolling pin, roll the dough into a 9 x 13-inch square on a floured surface and fit into the baking dish bottom (if dough breaks, press it together with your fingers).
Whisk together the eggs, sugar and flour until smooth. Add in all the zest and 3/4 cup each of grapefruit and lemon juice. Pour the filling into the crust. Bake the bars for 20-25 minutes, or until the center is mostly set. The bars will firm up as they cool, so be careful not to over-bake them. Remove the bars from oven and gently run a knife around the edges of the crust. (The crust will shrink when it cools and it will break the filling if you forget this step).
Cool completely in the pan. Chill.
Sprinkle with powdered sugar and a little grapefruit zest.
Cut into 2-inch squares and serve.
