
Green garlic has a mild garlicky flavor which pairs perfectly with the buttery fava beans in this delicious dip.
INSTRUCTIONS
Make an ice water bath and set aside.
Remove the outer shell (the pod) of the fava beans. Bring 8 cups (2 quarts) of heavily salted water to a boil. Add the fava beans and simmer for 5 minutes. Use a slotted spoon to remove the beans from the boiling water and place them in the bowl of ice water to stop the cooking process. (This will also keep the beans nice and green).
When the beans have sunk to the bottom of the bowl of ice water, remove and discard their outer peel.
In a small sauté pan, heat 1 tablespoon of olive oil over medium-high heat. Add the green garlic and spring onion and sauté until soft, about 2 to 3 minutes, without browning.
In a food processor or blender, purée the fava beans with the green garlic, spring onion, 1 teaspoon lemon zest, 1 tablespoon lemon juice and water until smooth. Stream in the remaining 2 tablespoons olive oil while puréeing, one tablespoon at a time.
Place the dip in a serving bowl and fold in the goat cheese until well combined. Season with sea salt, freshly ground pepper and sprinkle with chopped chives.
Serve with crackers, a veggie plate or baguette slices.
