
A quick and delicious way to enjoy asparagus. This makes a great side dish.
INSTRUCTIONS
Break the bottoms off of the asparagus spears.
In a sauté pan, heat the olive oil and butter over medium-high heat. When the butter is melted, add the asparagus and season with salt and pepper. Sauté, until lightly browned and tender, 8-10 minutes, depending on the thickness of the asparagus.
Add the lemon zest and cook 1-2 minutes. Add ½ of the lemon juice, toss to coat, and serve warm.
