Apricot and Peach Salsa

This salsa is sweet, salty and spicy. We love it with chips or on crackers atop smashed avocado.


serves 8-10


8 apricots, pitted and cubed

2 peaches, pitted and cubed

15 cherry tomatoes or 2 tomatoes, cubed

2 tablespoons fresh lime or lemon juice

1 tablespoon honey

½ teaspoon salt

¼ teaspoon fresh ground pepper

1 onion, minced

½ cup cilantro leaves, coarsely chopped

1 jalapeno hot pepper, seeded, cored and minced (optional)

2 avocados, sliced (optional)



Put the apricots and peaches in a medium bowl. Add the diced tomatoes to the bowl and squeeze in the lime or lemon juice. Add in the honey, salt and pepper. Let sit while preparing the rest of the ingredients.

Mince the onion, coarsely chop the cilantro and finely mince the jalapeno. Add it all to the bowl and stir.

Taste for seasoning and adjust for spiciness or saltiness. Serve immediately or keep in an airtight jar for up to 2 days.

Serve over a cracker with smashed avocado or just dip in your favorite chip.
