Blueberry Oatmeal Breakfast Bars

Perfect for a breakfast or snack on the go, these homemade bars are healthy and filling. 


2 1/4 cups raw oats

2 1/4 cups flour

1 1/2 cups brown sugar

1 1/2 teaspoons baking soda

1/2 teaspoon sea salt

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1 cup (2 sticks) butter, melted

3 cups blueberries

1/4 cup sugar

1 lemon, zested and juiced

1 1/2 tablespoons cornstarch



Preheat the oven to 350 degrees F. Line a 13x9-inch baking dish with parchment paper.

In a medium bowl, combine the raw oats, flour, brown sugar, baking soda, salt, cinnamon and nutmeg.

Pour the melted butter over the oatmeal mixture. Mix until incorporated and crumbly. Press 2/3 of the oatmeal mixture into the bottom of the prepared baking dish and save the other 1/3 for the topping.

In a separate small bowl, combine the blueberries, sugar, lemon zest, lemon juice and cornstarch. Mix until the blueberries are evenly coated. Pour the blueberries over the bottom crust. Crumble the remaining oatmeal mixture over the blueberries.

Bake for 20-25 minutes or until golden brown and the blueberries are bubbling around the edge.

Remove from the oven and let cool completely before cutting. (They are easier to cut if chilled).
