Kumquat Cucumber Moscow Mule

This Moscow mule is delightfully refreshing. The kumquats are a perfect citrus to use when combined with crispy cucumbers and bubbly ginger beer. Leave out the alcohol for a fun mocktail!

INGREDIENTS

2 teaspoons freshly grated ginger

4 ounces vodka

1/2 cucumber, thinly sliced

8 kumquats, thinly sliced, seeds removed

1 ginger beer

 

INSTRUCTIONS

In the bottom of a Moscow mule mugs or an old fashioned glasses, muddle the ginger with the vodka or gin in each mug or glass.  Layer ice, then cucumber slices, then ice, then kumquats. Pour over the ginger beer. Stir to mix and add cucumbers and kumquats on top for garnish. Serve immediately.
