Kumquat Salsa

This kumquat salsa has a crunchy citrus flavor combined with the tart red onion and a perfect amount of spice from the red pepper flakes. Scoop up with your favorite chip or cracker or use over fish, chicken or steak.


Makes about 2 1/2 cups


2 cups kumquats, thinly sliced and remove seeds

1/2 cup red onion, minced

1/4 cup fresh cilantro or parsley, chopped

3 tablespoons olive oil

2 tablespoons fresh orange juice

1/4 teaspoon red pepper flakes (optional)

1/8 teaspoon kosher salt

pinch of black pepper



Combine all ingredients. Add more or less red pepper flakes for desired spice. 

Let sit for one hour for the flavors to blend and allow the natural juices from the kumquats and red onion to be released. 

Enjoy with your favorite chips or crackers, or use as a delicious accompaniment for grilled fish, chicken or steak tacos!
