Satsuma Mandarin Vinaigrette

This citrus vinaigrette is perfect over any salad, but we also like it as a dip for veggies or to add some extra flavor to sandwiches. 

SERVING SIZE

makes 1 1/2 cups

INGREDIENTS

½ cup freshly squeezed mandarin orange juice

1 tablespoon mandarin zest

3 tablespoons apple cider vinegar

1 teaspoon whole grain or Dijon mustard

1 teaspoon honey (optional)

½ teaspoon sea salt to taste

1/8 teaspoon pepper to taste

½ cup extra-virgin olive oil

 

INSTRUCTIONS

In a small bowl, whisk together the mandarin juice, zest, vinegar, mustard, honey, sea salt and pepper until well combined. Slowly drizzle in the olive oil and whisk until well combined and thickened a bit. 

Pour over salad and enjoy.

Store in an airtight container or jar in the refrigerator for a week or so. Shake or whisk again before use.
