
This raw Brussels sprouts slaw is crunchy, sweet, fresh and refreshing for a quick and easy side dish.
INSTRUCTIONS
Using a mandoline or sharp knife slice the Brussels sprouts very thin. Place them in a large bowl.
Grate the carrots and apple, and add to the Brussels sprouts. Add in the sliced scallions. Toss to combine and set aside.
In a small bowl, whisk together the mayonnaise or yogurt, mustard, vinegar, honey, salt and pepper until smooth.
Drizzle over the brussels mixture and toss until well coated. Chill for about 10-15 minutes.
Toss again and serve with toasted pistachios or almonds on top for an extra crunch.
