
This salad has a fresh mint flavor that pairs perfectly with peaches. Bring it to your next summer BBQ and impress your guests with this display of some of summer’s finest ingredients.
INSTRUCTIONS
In a small saucepan, combine chopped mint and lemon juice. Bring to a boil and remove from the heat. Let steep for about 10 minutes. Strain into a small bowl, pressing on the leaves to extract all the liquid. Whisk in oil, vinegar, honey and ½ teaspoon salt. Set aside.
In a large bowl, gently toss the greens, chopped mint, peaches and tomatoes with half of the vinaigrette until well combined.
Place on serving dishes, sprinkle with toasted almonds, crumbled feta or goat’s cheese, salt and pepper to taste. Drizzle over a little more dressing and serve immediately.
