Fresh Tomato and Avocado Soup

INGREDIENTS

1 lb (about 4) tomatoes, chopped

1/4 cup red onions, chopped

1/4 cup seedless cucumber, chopped

1/4 cup red bell pepper, chopped

1 clove garlic, chopped

2 tbs extra virgin olive oil

1 tbs red wine vinegar

3/4 tsp salt

1/2 tsp cumin

1/8 tsp cayenne pepper

2 avocados, diced (about 2 cups)

4 sprigs of rosemary, roughly chopped

 

INSTRUCTIONS

Combine all ingredients except avocado in a large bowl. Mash lightly with a potato masher, stir in 1 cup water cover, and chill for at least 1 hour or up to 6. Stir in the avocado, garnish with rosemary and serve immediately.
