Kale Salad with Pears and Gouda

This kale salad adapted from Martha Stewart comes together in minutes and tastes delicious. This would also make a great packed lunch, as kale is more robust than lettuce and can be dressed the night before without getting soggy.

INGREDIENTS

1/2 head lacinato kale, torn from stem and massaged

1/2 pear (we used Bartlett)

1/8 cup walnuts

2 ounces goat's milk gouda cheese

1 tablespoon sherry vinegar

1 tablespoon olive oil

salt & pepper to taste

 

INSTRUCTIONS

Whisk together vinegar and oil in a medium bowl. Add in kale, cheese, walnuts and pear and toss to combine. Season with salt and pepper.
