Lemon Asparagus with Parmesan

Roasting asparagus with lemon and Parmesan is a great way to kick your side dish up a notch.

SERVING SIZE

4 as a side

INGREDIENTS

1 bunch asparagus, about 1 pound

1 tablespoon olive oil

2 tablespoons Parmesan cheese

1 teaspoon lemon zest

salt and pepper to taste

 

INSTRUCTIONS

Turn the broiler of your oven on high. Trim off about one inch of the bottom of the asparagus stalks and compost. Place the asparagus stalks in a roasting pan (not a glass one, as it can shatter when broiling). Drizzle the olive oil over the top, along with the cheese, lemon zest and salt and pepper. Cook for 7-10 minutes, until the asparagus is golden brown. Enjoy!
