2022 Packaging Update: Please note that Jacobsen Co. Savory Citrus Brine is no longer sold in a 16oz plastic container but is now packaged in an 8oz glass jar. 1 jar is enough for the majority of your dry brining, up to a 14lb bird. For wet brining, 1 jar is sufficient for a whole chicken, 1-2 turkey breasts, or a whole turkey up to 8lbs. For wet brining a whole turkey 9-14 bs, you will need 2 jars of brine.
About the producer
Ben Jacobsen owns and produces artisan hand-harvested sea salt at Jacobsen Salt Co. Initially founded in Portland, Oregon, Jacobsen Salt Co. has expanded to a facility located closer to the source in Netarts Bay, Oregon. Jacobsen Salt Co. harvests pure crystals from the Bay water to produce the finest artisan product.
In 2009, Ben started to experiment. It took him two and a half years of trial and error before he finalized the product. Not only did Jacobsen need to perfect the process, but he also wanted to use the finest water. “For me, finding the best water was just like a winemaker finding the best grapes,” he explains. Jacobsen’s favorite dish on which he garnishes salt is simple—he likes to put classic finishing salt on eggs and toast in the morning.
