Because it doesn’t use a starter culture, it is considered a wild fermentation that follows a course dictated by nature. It's not fast, but nature does make it relatively consistent. We say 'relatively' because while the bacterial progression is predictable, it varies based on sugar content of the cabbage and ambient temperatures. Salt & Savour’s sauerkraut is raw and not pasteurized. No sodium benzoate or potassium metabisulfite is used to preserve the product, so store the jar in the refrigerator.
